A microcontroller is a mind of pure logic. It operates at 3.3 volts and can muster perhaps twenty milliamps of current. It knows exactly when a massive power transistor needs to turn on, but it lacks the physical strength to throw the switch.

The gate of a power MOSFET is essentially a capacitor. To turn the transistor on quickly—before it spends too much time in the resistive, heat-generating intermediate state—that capacitor must be flooded with charge instantly. It requires ten or fifteen volts, and several amps of instantaneous current. A microcontroller attempting this directly would simply burn out.

The gate driver is the necessary translator between logic and power.

It takes the delicate, low-voltage signal of intent from the microcontroller and uses it to trigger a massive, high-current reservoir, slamming the MOSFET gate open or closed in nanoseconds. It is the hydraulic lever that allows a tiny key to open a floodgate.
